INGREDIENTS

3 cups sugar 2?3 cup evaporated milk 3?4 cup butter 1 (16 ounce) jar crunchy peanut butter 1 teaspoon vanilla 1 (7 1/2 ounce) jar marshmallow cream


DIRECTIONS

Grease 9X13 cake pan. Mix sugar, evaporated milk, and butter in pan. Stir constantly over medium heat. Bring to a full boil and stir for 4 more minutes, or until a candy thermometer reads between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from stove and stir in peanut butter, vanilla, and marshmallow cream. Spread evenly into pan and chill in fridge until firm. Enjoy!

SOUP 2 tablespoons butter 4 large Spanish onions, quartered and cut into 1/4-inch slices 1?2 teaspoon salt 1?4 cup flour 9 cups beef broth 3?4 cup red wine 3 tablespoons brandy 1 bay leaf 1?2 teaspoon dried thyme 1?2 teaspoon black pepper CROUTON BREAD SLICES 1 tablespoon olive oil 1?2 teaspoon garlic powder 4 slices French bread, 1/2-inch thick TOPPING 4 -6 ounces gruyere cheese, shredded (or mozzarella)


DIRECTIONS

SOUP: In dutch oven, melt butter over medium heat. Add onions and salt, cover and cook until softened, stirring occasionally about 15 minutes. Uncover and cook until caramelized, about 30 minutes more. Stir in flour; cook 2 minutes. Stir in remaining ingredients. Simmer, partially covered about 30 minutes. Remove bay leaf. Cool and refrigerate till next day. CROUTON BREAD SLICES: Preheat oven to 375F Mix olive oil with garlic powder and brush both sides of bread slices with the oil mixture. Place on baking sheet and bake 12 minutes, turning once, until bread is slightly toasted. Set aside. TO SERVE: Preheat broiler. On stovetop, heat soup to a simmer. Ladle soup into 4 broiler safe bowls. Top with french bread slices and cheese. Place bowls on baking sheet and broil 4" from heat until cheese is bubbly. about 2 minutes. Garnish with fresh chopped parsley. PASTRY PUFF VARIATION: Preheat the oven to 400F Roll out one sheet of puff pastry and sprinkle with half the Gruyere cheese, fold into 3 and roll out again. Cut out 4 lids. Divide the soup among ovenproof soup bowls. Sprinkle the remaining cheese on top of soup and cover with the pastry lids with a little egg wash seal. Bake the soup in the oven for 15 minutes or until the cheesy puff pastry is golden in colour and well risen.

3?4 cup butter, softened 3 eggs 2 cups all-purpose flour 3?4 cup unsweetened cocoa powder 1 teaspoon baking soda 3?4 teaspoon baking powder 1?2 teaspoon salt 2 cups sugar 2 teaspoons vanilla 1 1?2 cups milk CHOCOLATE-SOUR CREAM FROSTING (SEE RECIPE BELOW) 2 cups semisweet chocolate pieces 1?2 cup butter 1 (8 ounce) carton sour cream 7?8 cup sifted powdered sugar


DIRECTIONS

Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, lightly grease bottoms of two 8x8x2-inch square or 9x1-1/2-inch round cake pans. Line bottom of pans with waxed paper. Grease and lightly flour waxed paper and sides of pans (or grease one 13x9x2-inch baking pan) and set aside. In a mixing bowl stir together the flour, cocoa powder, baking soda, baking powder; and salt; set aside. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, about 1/4 cup at a time, beating on medium speed until well combined (3 to 4 minutes). Scrape sides of bowl; continue beating on medium speed for 2 minutes. Add eggs, one at a time, beating after each addition (about 1 minute total). Beat in vanilla. Alternately add flour mixture and milk to beaten mixture, beating on low speed just until combined after each addition. Beat on medium to high speed for 20 seconds more. Spread batter evenly into the prepared pan(s). Bake in a 350 degree F oven for 35 to 40 minutes for 8-inch pans and the 13x9x2-inch pan, 30 to 35 minutes for 9-inch pans, or until a wooden toothpick inserted in the center comes out clean. Cool cake layers in pans for 10 minutes. Remove from pans. Peel off waxed paper and cool thoroughly on wire racks. Or place 13x9x2-inch cake in pan on a wire rack; cool thoroughly. CHOCOLATE-SOUR CREAM FROSTING: In a large saucepan melt 1 12-ounce package (2 cups) semisweet chocolate pieces and 1/2 cup butter over low heat, stirring frequently. Cool for 5 minutes. Stir in 1 8-ounce carton dairy sour cream. Gradually add 4-1/2 cups sifted powdered sugar (about 1 pound), beating with an electric mixer until smooth. This frosts tops and sides of two or three 8- or 9-inch cake layers (halve the recipe to frost the top of a 13x9x2-inch cake). Cover and store frosted cake in the refrigerator.

1 1?4 cups sifted all-purpose flour 1 teaspoon salt 8 ounces unsalted butter 4 ounces unsweetened chocolate, coarsely chopped 2 ounces bittersweet chocolate, coarsely chopped 2 cups sugar 1 teaspoon pure vanilla extract 4 large eggs, room temperature

Center a rack in the oven and preheat the oven to 350. I bake them at a lower oven temp of 330. Sift the flour and salt together; set aside. Melt the butter and chocolate together in a medium saucepan over low heat, stirring frequently and keeping a watchful eye on the pot to make certain the chocolate doesn't scorch (Alternatively, you can melt the ingredients in the top of a double boiler over, not touching, simmering water.) Add 1 cup of the sugar to the mixture and stir for half a minute, then remove the pan from the heat and stir in the vanilla. Pour the mixture into a large bowl. Put the remaining 1 cup sugar and the eggs into a bowl and mix or whisk by hand just to combine. Little by little, pour half of the sugar and eggs into the chocolate mixture, stirring gently but constantly with a rubber spatula so that the eggs don't set from the heat. Fit the whisk attachment to the mixer and whip the remaining sugar and eggs until they are thick, pale, and doubled in volume, about 3 minutes. Using the rubber spatula, delicately fold the whipped eggs into the chocolate mixture. When the eggs are almost completely incorporated, gently fold in the dry ingredients. Pour and scrape the batter in to an unbuttered 9-inch square pan. Bake the brownies for 22-26 minutes, during which time they will rise a little and the top will turn dark and dry. Cut into the center at about the 22-minute mark to see how the brownies are progressing: they'll be perfect if they're just barely set and still pretty gooey. They're still awfully good on the other side of set, so don't worry if you miss the moment on your first try. Cool the brownies in the pan on a rack.

INGREDIENTS

2 cups all-purpose flour 3 teaspoons baking powder 1?2 teaspoon salt 3?4 cup white sugar 1 egg 1 cup milk 1?4 cup vegetable oil


DIRECTIONS

Preheat oven to 400F (205C). Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2-cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. DO NOT OVERMIX. This will create tough/heavy muffins. Pour the batter into paper lined muffin pan cups. Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits. Bake for 25 minutes, or until golden.
